Building on Jacob’s experience in working with heritage grains during his time at Dornoch Distillery, North Uist construct their mash bill using other heritage barley varieties with Bere as their spirits backbone.\nEnjoy a tasting and discussion of their new make spirit and cask samples ahead of first release, while exploring the challenges and opportunities of working with Bere barley, developing their  recipes, and plans for a traditional on-site floor malting as they work towards grain to glass production\n
